Summer at the market is truly the best – each week we are getting new, fresh, local goodies. This week, we are highlighting some of our favorite summer fruits and veggies!
Blueberries – let’s face it, sometimes the pint of blueberries that I buy at the market doesn’t even make it home! Blueberries are a powerful antioxidant and are also a good source of Vitamin C and fiber. Here’s a great recipe for a Blueberry Tart that also uses some other yummy ingredients from the market!
Peppers – if you’re like me, you put peppers on everything! ALL peppers are a great source of Vitamins A and C, Potassium, and Fiber. Peppers tend to change color as they ripen and they pack more nutritional value the longer they are on the vine.
I love to make a simple Naan pizza with fresh peppers from the market or my garden. Preheat the oven to 425. As a sauce I like to use Cheeky Monkey Tomato Oil from the Taste NY store or fresh pesto from the market. Top with shredded mozzarella cheese, peppers, and whatever other fresh veggies or herbs that you want! Bake for 12 minutes until crust and cheese are browned.
Summer Squash – There is always an abundance of Summer Squash at the market – it grows like crazy! Summer squash are high in Vitamin C. This is a great simple pasta dish using Summer Squash and fresh herbs.
Tomatoes – Tomatoes are chock full of antioxidants, Vitamins C and K, and potassium, and are great just for snacking. If you’re interested in something a little heartier, try this Heirloom Tomato and Beet salad.
Zucchini – Zucchini is another one that just takes over. It’s high in Vitamins A and C and potassium. Try this Sausage Ratatouille packed full of zucchini and other fresh veggies for an easy weeknight dinner.
